Pancakes and Fudge Cake…What’s Up!

They were warm, fluffy, and fragrant. Yesterday,our living room filled with adults and children and soon, we had emptied two large pans of pancakes!

I enjoy starting Lent with others. There is something good and intentional  about inviting friends,serving pancakes, and beginning the journey!

♥♥Tomorrow is Valentines Day♥!  I know this doesn’t fit into a “healthy” menu, but if you are looking for a decadent treat to complement a Valentine’s meal… this is it!

Triple Chocolate Fudge Cake:

1 box devils food cake mix
1 box chocolate fudge instant pudding
4 eggs lightly beaten
1c. sour cream
1/4 c Grand Marnier or Orange juice (either one works well, I used a combo of the two)*
1tsp grated orange peel (yep, if you don’t have it on hand, it’s not crucial)
1c. chocolate chips
Preheat oven to 350. Generously grease a 12″bundt pan.
In a large bowl combine the cake mix and pudding mix. Use a fork to mix and break up the lumps. Make a well in the center and add the eggs, sour cream, Grand Marnier, and orange peel. Uisng an electric mixer on low speed, mix for two minutes till everythings comined. Fold in the chocolate chips. Batter will be thick. Spoon into the pan. Bake for 50-60min.  Let cool for 20min, and then invert on to a wire rack. Cool completely. The best way to enjoy?… warm, with a scoop of vanilla ice-cream or sweetened whipped cream.My sister adds elegance to her presentation with raspberries.
(*I have also used raspberry punch, and in a pinch I once used water and it  worked fine.)

  1. It would be dangerous for me to have that cake within my grasp! Okay…maybe on Sunday it will be good as I will have 5 other people eyeing it! Do you think I could make six servings out of one GIANT cake??? :).

  2. We, too, ate pancakes last night. Not that we will avoid pancakes or eggs for the next six weeks, or even cake, for that matter. Our observation of Lent has changed, but I still enjoy the little tradition of a pancake dinner.
